With the sponge plugin, you are able to create fun trampolines for every player of your server. By simply placing sponge in a vertical direction, you can launch them vertically. Furthermore, any direction you place sponge will launch the player in said direction. Note that every feature of this plugin is highly customisable, with a permission required to allow a player to use the sponge. Here is a fun example of what a trampoline would look like:
