Idea to add: Skeleton wearing a jackolantern and black leather chest, riding a skeleton horse, with an iron sword. Would be like the classic headless horseman: https://www.google.com/search?q=headless horseman

Also since this would require figuring out mobs riding the new horses, it would also be cool to see a zombie wearing iron armor with an iron sword wearing a zombie horse with iron horse armor. Like a zombie knight/horse combo
